Looking to stock up the freezer with some beef? Investing in a beef quarter or half can be an economical way to enjoy local, high quality beef for months to come. The best part is you get to choose how YOU like your beef. You can try cuts that are not usually available in the grocery store because there are only 1-2 cuts per animal. What makes our Wagyu-Holstein Beef Different?

While our main farm business is dairy farming, we are also beef farmers. We use Wagyu bulls on some of our Holstein dairy cows to make a unique beef eating experience. Wagyu is a beef breed known for increased tenderness and marbling (where all the flavor comes from). While dairy breeds, such as Holsteins, are usually not known for making beef, these breeds also excel in the quality department when it comes to their beef. Combining the high quality traits from both breeds makes for some of the most tender and juiciest beef you’ve ever tried. And you’ll get to enjoy it right in your own home! What to expect when you buy a quarter beef?

It can be daunting to think about bringing home over 100 pounds of beef the first time. But, when you see the value and quality of purchasing a quarter beef directly form the source, you won’t regret it. Below is an example of a list of cuts with quantities that a quarter beef gets you:

  • T-Bone Steak (1 in.) ~6-8 steaks

  • Sirloin Steak (1 in) ~6-5 steaks

  • Ribeye Steak (1 in) ~6-8 steaks

  • Round steak/roasts ~7-8 pounds

  • Chuck Roast (2.5#) ~2-3 roasts

  • Arm Roast (2.5#) ~3-4 roasts

  • Sirloin Tip Roast (3.5#) ~1 Roast

  • Ground Beef ~55 pounds

Interested in stocking up your freezer? Here are the next steps…

  1. Contact us to get put on our reservation list. We will require a $100 deposit/quarter to reserve your spot. This $100 will be taken off your total for your beef.

  2. We will contact you when your beef goes into the processor. We do all our processing locally with Dover Processing in Dover, MN. Your pay us directly per pound of hanging weight and we will let you know what that amount is when the beef goes into for processing. Our pricing can fluctuate with changing input costs, but you will know this cost before you make your reservation.

  3. We will have you call Dover Processing sometime during the week after the beef goes in so they can get your customized processing instructions from you. They are great at guiding you if you’ve never done this before.

  4. Dover Processing will call you when your beef is done and ready to pick up. This could take anywhere from 2-4 weeks depending on what kind of things you order from your beef. You will pay Dover directly for processing when you pick up your beef.

  5. Enjoy lots of delicious beef at home!
